This is the 1 dish that I've cooked on a once a year basis, and each time happen to be during CNY...
I've cooked this once again on the eve of CNY. (total 3 times to-date)
Perhaps this is a simple trick of mine - to not cook this too many times during the year, so that each time, my family member would have forgotten the taste from the year before, and will fall in love with dish all over again.
You will be pleasantly surprised with how good this taste, just through this rather simple recipe :
(this recipe was from Malaysian Women Weekly)
30g butter
1 tbsp oil
2 tbsp chilli sauce
3 cloves garlic, crushed
2 pinches turmeric powder
2 1/2 tbsps lemon juice
300ml thickened cream
500g prawns
salt to taste
1. Heat butter and oil in wok over medium fire till frothy. Add chilli sauce, garlic and turmeric. Stir for 1 min.
2. Add lemon juice. Simmer over low fire, stirring for another min. Stir in cream. Bring to boil, then reduce fire and simmer for 4 to 5 mins or until sauce thickens.
3. Add prawns. Cook, stirring occasionally for 3 to 4 mins or until prawn changes colour. Season to taste with salt.
Happy trying..

Mom's Cooking @ Home Sweet Home
A change from my usual eat out habit, I love it when my mom cook during Sunday afternoon.
This is my idea of a perfect home cooked meal.
Steamed chicken with dipping made out of lots of ginger, parsley and oil.
The steamed lap chiong to dipped with the scallion head (not sure if its called scallion). But to take this raw, goodness, I just love the taste of it.
Voted as my No1 favorite out of my mom's cooking, it ought to be this - the minced meat wrapped with dried oyster/dried scallop. It was very simply, cooked with spring onion, garlic, black mushroom, oyster sauce and pepper to taste.

Vietnamese Roll @ Jo's Home Sweet Home
Decided to drop by Babe's home one Saturday, and for light meal, I decided to make the vietnamese roll. This ought to be the easiest meal to prepare.
A choice of any ingredients you like can be used.
1. First to have is pack of rice paper - which will need to be soaked in warm water, before we use it to wrap all other ingredients
2. Choice of any ingredients you like. I had the small prawns, lightly grilled. Prior to that, it was marinated with sugar, soya sauce and pepper.
The chicken grilled - marinated with teriyaki sauce.
Mint leave is a must. The taste of vietnamese roll was enhanced with the minty taste.
Other ingredients placed into the vietnamese roll was the lettuce, cucumber, meehoon (boiled). There goes an easy light meal to prepare.
The sauce - water mixed with fish sauce, sugar, lime and clove of garlic.
As a 'bonus', I also cooked up the simple, mushroom, saute with lots of garlic and parsley.

As additional 'bonus', Jay made this really simple salad. Peeled crabstick, mixed with mayo and wasabi. This tasted really good. This can be eaten, wrapped in lettuce.
Overall, satisfying and simple meal.

Cooking Lesson @ Dina's Home Sweet Home
Took advantage of the Labour Day for the long overdue 'cooking class' from Dina. She is a really good cook, and thank you "Chef Dina", for the thorough lesson given to me. Hope I will be able to cook it as well when I do it on my own. All the 3 dishes - fried chicken, mashed potato, spinach with milk plus a salad took only about an hour, which includes preparation and cooking.
Dina imparting cooking tips to me, while I am paying close attention
Fried Chicken
1. Marinate chicken breast with salt, for about 15 mins. (drumstick can also be used, however, breast meat cooked easiest with this recipe).
2. Dip in flour (the normal flour, and not self-raising flour).
3. Add a little milk to the egg, beat the egg, and dip chicken to egg.
4. Coat well with breadcrumb.
5. Fry with slow-medium fire.
We had a salad - capsicum, tomato, big spring onion, feta cheese, mixed with vinegar and olive oil. Just love it.
The Salad
I had such a lovely afternoon - great lesson, yummy lunch, and wonderful company *<>*
The main dish I've been longing to learn from her since I tried it 3 years ago was this fried chicken.
With Dina's permission, I am sharing the recipe in my blog. The recipe is indeed really simple, yet super duper tasty, and the chicken came out really moist.

The meal that I had the other day was indeed 'first-class'. Mashed potato was good, if not better than those I've tried in some restaurants, and the spinach cooked with milk, a real unique dish which I've not tried anywhere else so far.
